Traditional Poriyal Recipe with Veettu Masala
Poriyal is a flavorful, dry South Indian vegetable stir-fry, perfect as a side dish for rice or chapathi. Here’s how to make a delicious poriyal using Veettu Masala Poriyal Masala.
Ingredients:
- 500g vegetables of your choice (cut into small chunks)
- 1 onion (optional), chopped
- 2 tsp Veettu Masala Poriyal Masala
- 2 tsp oil (coconut, peanut, or sunflower)
- ยฝ tsp mustard seeds
- 2 dried or fresh green chilies, sliced
- Curry leaves
- Pinch of hing (asafoetida)
- Salt to taste
- 2 tbsp grated coconut or rice powder (optional, to absorb moisture)
Instructions:
- Prepare the Vegetables:
Cut 500g of vegetables into small chunks. Chop 1 onion if using.
- Tempering the Spices:
In a heavy-bottomed pan, heat 2 teaspoons of oil. Add mustard seeds, sliced chilies, hing, and curry leaves. Once the mustard seeds begin to splutter, add the chopped onion and sautรฉ until translucent.
- Cook the Vegetables:
Add the chopped vegetables to the pan. Cover the pan with a lid and simmer for 2 minutes, letting the vegetables release some moisture.
- Add the Spices:
Sprinkle 2 teaspoons of Veettu Masala Poriyal Masala and salt to taste. Stir everything together to coat the vegetables evenly with the masala. Cover the pan again and cook on the lowest flame for 5-10 minutes, stirring occasionally to prevent burning.
- Finish the Poriyal:
For a dry poriyal, add grated coconut or 2 tablespoons of rice powder to absorb any excess moisture. Stir well and cook for another 2 minutes.
